Parmesan Potatoes with Garlic


I'M SUCH A BLOGGING COMPLAINER!!!

I honestly started this conversation complaining about how I've eaten nothing but crappy food lately and how moving and marriage is stress.

I swear if you read the last five-ten blog posts, they would all have the same similar sob story going on.

It's pathetic. I swear I do have other things going on in my life. I don't just sit at home and complain about moving and marriage. At least, I'd better not... the wife probably wouldn't approve of that bit of complaining.

Last night something exciting DID happen!  We had friends over for dinner for the first time since moving into this house. It's always exciting to show off a new place, even if it isn't beautified yet. And on the plus side, I definitely got the chance to get back into cooking shape!

These potatoes are a step in the right direction and definitely up my alley. Simple and easy, but delicious. And when entertaining guests something that meets all those categories is always a winner. Aaand it was.

Sooo you should try it. Please? Give me some self confidence!


Parmesan Potatoes with Garlic

Red Potatoes - 5, cut into small bite sized pieces
Olive Oil - 2 tbsps
Salt and Pepper
Garlic - 4 cloves, minced
Green Onion - 2 stalks, chopped
Bacon - 4-6 slices
Parmesan Cheese -  about a 1/4 cup

Preheat the oven to 350F

Toss the potatoes, olive oil and salt and pepper in a bowl until well coated. Place on a oiled baking sheet. Place in the oven for about 30-40 minutes. Pull out of the oven and sprinkle on the garlic and green onion. Cook for an additional 5-10 minutes or until the garlic is fragrant and lightly browned.

While in the oven, cook the bacon as desired, but I suggest some crunch to it. Cut into small pieces.

Spoon off of the baking sheet into a serving bowl and sprinkle on the Parmesan cheese and the bacon. Toss to mix it together.  Enjoy it folks, it's a tasty side!

  1. yum, these sound terrific! I hope this house is starting to feel like home and that life can be more fun in the coming weeks. You two should have people over more often:-) And I don't think you complain too much here. Life has been a bit busy with some surprises thrown in and I think you have handled it well :-)
